Chocolate banana bread

Last week my fruit basket was filled with bananas. Some how my husband and I both shopped for them and ended up with two bunches of bananas at home. So I thought to make use of some bananas by making the bread. Since I had already prepared banana walnut bread, I thought of making chocolate pecan this time. The bananas were ripe enough which was perfect for baking. The flavor of banana and chocolate while baking was irresistible. My 19 month old son was not ready to come out of the kitchen until I   removed the bread out of the oven. He loved having it more than anyone!

Ingredients:

All purpose flour-1 3/4 cup

Granulated white sugar-1 cup

Baking powder-1 tsp

Baking soda-1/4 tsp

Salt-1/4 tsp

Dark chocolate chips-1/2 cup

Pecans and walnut-1/4 cup each toasted and chopped

Unsweetened dutch processed cocoa powder-1/4 cup

Unsalted butter– 1/2 cup melted and brought to room temperature

Large eggs-2 at room temperature

Pure vanilla extract– 1tsp

Ripe bananas-3 mashed

Preparation:

Pre heat oven to 350°F. Whisk all the dry ingredients (all-purpose flour, sugar, baking powder, baking soda, salt, cocoa powder) together.

In a separate bowl mix vanilla extract to lightly beaten eggs, add in the melted butter and give it a nice stir.

Add the mixture slowly to the dry ingredients and mix until well combined. Now add the mashed bananas, nuts and chocolate chips, mix lightly until just combined . Do not over mix the components.

Add the mixture into 9X5 inch loaf pan greased with baking spray or oil.

Bake for 60-65 minutes or until a tooth pick inserted comes out clean.

Re-posting ABC halwa

Wondering what this ABC halwa is :). It stands for apple, banana and carrot halwa and can be prepared very quickly. Its a favorite sweet for kids.

My mother-in-law has come to visit us.  We both are very enthusiastic about preparing sweets because, sweet is all time favorite at our place. We have prepared many sweets in the last few months and did not want to repeat any and were wondering what do we prepare next. Fortunately she had brought her recipe book where, she found the recipe for this sweet . I prepped everything quickly and the sweet was ready in minutes.

Ingredients:

carrot- 2(grated)

Apple-2(grated)

Banana-2(mashed)

Whipping cream-1/4 tin

Shredded Coconut-4 tbsp

Ghee-3 tbsp

Sugar-4 tbsp (depending on the sweetness of the fruit)

Cardamom powder-1/2 tsp

Cashew and raisins for garnishing

Preparation:

In a heavy bottom pan, heat ghee, add cashews ( I added around 10-12 cashews, and 10-15 raisins) fry until golden brown. Add raisins, remove quickly and keep aside.

Next add grated carrot and apple into the ghee,cover and cook for 5 minutes. Add banana and whipping cream (can use milk too) and mix well. Cook for another 3-4 minutes. Add sugar( if the fruits are sweet enough, add less sugar. Sugar can be added at any point) and mix shredded coconut. Do not cook too much after adding the coconut. You would want to leave it a bit crunchy. Turn off the heat, Mix cardamom powder and garnish with cashews and raisins.

Banana, Walnut Bread

 My aunt had visited me two years back from Mumbai and she bakes awesome cakes and bread. She actually was the one who taught me the baking tricks with lot of good tips. She baked this bread while she was in my house and since then I have baked it too many times. I always wanted to blog about it but never really got a chance to take some pictures, which I finally did yesterday. A perfect bread to have with a hot cup of tea or coffee in the evenings

Ingredients:

All purpose flour-2 cups

Powdered sugar– 1 cup

Bananas- 3 (fully ripened and big ones)

baking soda-1 tsp

walnut-1/4 cup (chopped into small pieces)

olive oil– 1/4 cup

Preparation: In a large bowl mash the bananas really well and add powdered sugar and mix well. Add olive oil and walnut, mix until it has incorporated well into the mixture. Sieve all purpose flour along with baking soda. Divide the flour into 3 to 4 batches and add each batch of flour to the mixture slowly and mix. Make sure to have mixed the flour in one direction to avoid uneven mixing. Grease and flour the baking pan (I used 9 inch loaf pan) and add the mixture evenly. Preheat oven to 350°F and bake the bread for 30 to 35 minutes or until a toothpick comes clear when inserted in the center. Cool it for 5-10 minutes, Make sure the edges of the bread are clear from the pan (Insert a blunt knife and make it clear, making sure not to touch the base of the pan) before inverting. Do not keep the bread out for too long as it might loose its softness.
